The Asany Dai-cao is a traditional Chinese cai-dao-style hatchet with a wide forged shaft (this prevents food from sticking during cutting) and smooth leads. Called "Chinese cleaver" or "hatchet", Cai Dao is a rectangular Chinese chef's utility knife traditionally used in China, Vietnam, Cambodia and many other Asian countries to butcher meat, fish and vegetables. In appearance, Cai Dao resemble Western kitchen hatchets, but you should not use it as such, it is clearly not intended for this. The fact that the blade is heavier towards the end of the blade encourages skilled Chinese cooks to use the wiggle or "tap" technique as they work, and this is very convenient. However, the cutting edge can be damaged if used for cutting bones. Hatchet cleavers for chopping bones and meat in China are almost the same shape as chef's knives, but have a much thicker blade.
The handle of the Asany Dai-cao knife, oval in cross section, is made of exotic wood - the Malaysian Merbau. The length of the handle with bolster is 135mm. Bolster - steel, 25mm long, reliably relieves any mechanical stress when cutting products, unloading and protecting the handle from damage. The balance of the knife is shifted to the blade, which is very convenient when using a kitchen knife. Blade length 180mm, height - 84mm, butt thickness - 2.5mm. The blade is made of kitchen molybdenum-vanadium stainless steel 4Cr13MoV, which is characterized by good performance parameters, including anti-corrosion properties and resistance to blunting. The blade is hardened to 57HRC Rockwell.
