Nakayama is one of the most ancient and famous Japanese sharpening stones from the quarry (mine) of the same name. The history of the mine and, accordingly, the Nakayama stone has about 900 years.
The stone is especially interesting not only because it gives the highest uniformity and speed of work, as for a finishing stone. In addition, the stone has a very large abrasive range and gives a variety of methods of use. It can be used both in pure form with water, with a suspension of the stone itself, and with suspensions from nagura and other stones.
The hardness of the stone is usually estimated from 3.5 to 5 Lv. Depending on the stratum (layer) of stone extraction. In my opinion, this stone is medium hard. That is why it is great for sharpening knives.
