Because the Lobster series has a rather soft bond (so it works very aggressively and removes metal well), the small size of the previous series of stones was not very practical. And the thickness of the bars of 200 and 1000 grit in 30mm allows you to work on these stones for a long time, since these stones bear the main load during sharpening. The ratio of stone thicknesses of 200 and 1000 grit and 3000 grit (30 and 20 mm) leads to a uniform consumption of stones of different grain sizes.
